This is one of the easiest and most delicious recipes I’ve found for cooking pork in a slow cooker.  

It is just the right mix between sweet, tangy and herby!  Plus, you can use the cheapest cut of pork fillet and it will still taste delicious. 

This recipe will feed 4-6 and costs less than £5.

Ingredients

I cup chicken stock 

¼ cup Soy Sauce 

¼ cup balsamic vinegar 

3 tbsps Honey

1 tbsps dijon mustard 

1 cup diced onion

3 chopped garlic cloves

2 tsps rosemary 

1 tsp oregano 

1 tsp thyme

½ tsp black pepper 

1 large pork fillet

1 tbsp corn flour  

 

Add all the ingredients except the pork and corn flour to the slow cooker and mix until well combined.

Add the pork and turn over to coat on all sides.

Cook on low heat for 6-8 hours until the pork is tender and pulls apart. 

Remove pork and wrap in foil until needed.

To create the gravy.  Sieve the liquid over a saucepan to remove the herbs etc. Take a tablespoon of the gravy and mix with the corn flour until combined.  Add mixture to the gravy liquid and boil for a couple of minutes to thicken.

Serve with your choice of vegetables with the delicious gravy.
