Try this quick and easy recipe for a quick fix on a cold night!


  • 2 medium zucchini, chopped
  • 1 onion, chopped
  • 2 tablespoons of oil
  • 2 cups of cooked chicken, shredded
  • 1 can of mixed vegetables, drained
  • 1 can of vegetarian baked beans
  • 2 cups of cooked brown rice


In a large sauce pan, sauté chopped onion and zucchini in oil on medium heat until soft. Add salt and pepper to taste.

Mix chicken and cook for about 3 minutes. Mix entire can of vegetarian baked beans (including sauce).

Add can of mixed vegetables (drained) and stir in cooked brown rice. 

Heat until hot throughout.

Yields 4 servings.

444 calories, 12.5 grams of fat, and 25.6 grams of protein
